Starting Nov. 1, Martinique-born chef Louis-Philippe Vigilant designs the Business meals on long-haul flights from Pointe-à-Pitre, Fort-de-France, Saint-Martin and Cayenne to Paris-Charles de Gaulle, according to [Air France's Oct. 28 announcement](https://corporate.airfrance.com/en/press-releases/louis-philippe-vigilant-air-frances-new-signature-chef-flights-departing-french). His dishes will also appear on selected flights in the airline's regional Caribbean network.","textStyle":"body","layout":"text"},{"role":"body","format":"markdown","text":"Air France says Vigilant is the fourth major chef to cook for its flights from the Antilles and French Guiana. For travelers, the change brings the Caribbean routes closer to what Air France already serves on its long-haul flights out of Paris.\n\n## Who the chef is\n\nVigilant left Martinique at 17 to train in mainland France, according to a report by [Outremers 360](https://outremers360.com/bassin-atlantique-appli/aerien-louis-philippe-vigilant-nouveau-chef-signature-dair-france-au-depart-des-antilles-et-de-la-guyane) on the announcement. He studied at a hotel school in Montpellier and joined La Côte d'Or in Saulieu, the restaurant made famous by Bernard Loiseau, in 2006.\n\nHe later cooked at L'Oustau de Baumanière in Provence and at the Strato in Courchevel. In 2013 he took over Loiseau des Ducs in Dijon, which went on to earn a Michelin star. He went back to Saulieu in 2022 and became culinary director there in September 2023. Outremers 360 says he now leads the two-star Relais Bernard Loiseau.\n\n## What's on the Business menu\n\nVigilant has created 12 new dishes with Servair, Air France's catering partner. They will be rolled out over the coming months, so the menu you see on your flight will change as the season goes on. The range covers vegetarian, fish, red meat and poultry choices.\n\nTwo examples have been shared so far. One is a fish and shellfish pot-au-feu with a Madras curry sauce and ginger vegetables. The other is beef cheek braised in a Burgundy sauce, served with mashed potatoes made with Cazette hazelnuts, which points back to his years in Burgundy.\n\nBusiness passengers on these routes can also pick their hot main course up to 24 hours before departure. Air France presents the pre-order as a way to cut food waste. In practice, it also means you are much less likely to lose out on your first choice on a full evening flight to Paris.\n\n## Premium cabin meals\n\nAir France's Premium cabin, its premium economy, gets meals from Frédéric Simonin, whose Paris restaurant holds one Michelin star. On flights from Pointe-à-Pitre, Fort-de-France and Cayenne, Premium passengers choose between two hot dishes that rotate. One of them is always vegetarian.\n\nSimonin already designs the Premium meals on long-haul flights from Paris, as we noted in [our story on Air France's new long-haul menus](https://www.loungefrog.com/news/air-france-new-long-haul-menus-six-chefs-october-2026). That October launch put six French chefs across La Première, Business and Premium on departures from Paris. The Caribbean menus follow the same plan, with a chef chosen for the region.\n\n## How this compares with flights from Paris\n\nOn long-haul departures from Paris, Air France's Business hot dishes now come from Mathieu Viannay of La Mère Brazier in Lyon. On the way back from the islands, the food will come from a chef with roots in Martinique. Many people on these routes fly often to see family, so a menu built for the region is a small but real change on a trip they take again and again.\n\nThe announcement covers only departures from the French Caribbean and French Guiana. It does not say whether Vigilant's dishes will appear on flights from Paris.\n\n## Where to wait before your flight\n\nLounge Frog does not yet list lounges at Pointe-à-Pitre, Fort-de-France, Saint-Martin or Cayenne. Check with the airport or the airline for the Business lounge options at your departure point.\n\nAt the other end, Business passengers who connect at Charles de Gaulle can use the Air France long-haul lounges in Terminal 2E. The [Hall L lounge](https://www.loungefrog.com/lounges/cdg-air-france-lounge-2e-hall-l) is one of the best rated on the site, and the [Hall K](https://www.loungefrog.com/lounges/cdg-air-france-lounge-2e-hall-k) and [Hall M](https://www.loungefrog.com/lounges/cdg-air-france-lounge-2e-hall-m) lounges are the other options. Access follows the [Air France Lounge](https://www.loungefrog.com/programs/air-france-lounge) rules, and [Flying Blue](https://www.loungefrog.com/programs/flying-blue) elites can get in through [SkyTeam lounge access](https://www.loungefrog.com/programs/skyteam-lounge-access). Note that the cheapest Business Light fares and awards don't include lounge entry, as we explained in [our story on Flying Blue's Business Light awards](https://www.loungefrog.com/news/flying-blue-business-light-awards-no-lounge-access).\n\n## What it means for you\n\nIf you fly Business from the French Caribbean or French Guiana, set a reminder to pick your main course a day ahead. The menu will change over the next few months, so a return trip in spring may bring different dishes than one in November.
