Starting November 1, United Polaris travelers on international flights can pre-order a new set of meals from chefs featured by Chef's Table, the brand behind the Netflix food series. The airline says the new rotation has 30 dishes from 11 chefs, tied to ten cities, and will be served through December 31.","textStyle":"body","layout":"text"},{"role":"body","format":"markdown","text":"This is the second round. The first Chef's Table menu went on sale August 1. According to [United's announcement](https://united.mediaroom.com/2026-10-29-United-Chefs-Table-Serve-Up-Next-Course-New-Meals-from-World-Renowned-Chefs-Take-Flight-November-1), more than 60,000 customers have eaten those meals since then, and their satisfaction scores ran nearly 20 points higher than for other pre-ordered meals. United says the program will keep rotating by season into 2027.\n\n## How to get a Chef's Table meal\n\nThe meals are not a cabin-wide service. You have to pre-order them, and only United Polaris customers on international flights can do so. Ordering opens five days before departure and closes 24 hours before, on united.com or in the United app.\n\nEach chef's dishes are served only on flights that leave from that chef's home city, and only on flights with a lunch or dinner service. So a Los Angeles chef's menu is for departures from Los Angeles, not for the return trip. A late-night flight with a lighter meal may not offer the option at all. United has not said what happens if you miss the 24-hour cutoff, so it is safest to treat the regular Polaris menu as the fallback.\n\n## The chefs and cities\n\nUnited picked one chef or chef team for each of its seven US hubs, plus three overseas gateways:\n\n* **Los Angeles:** Nancy Silverton of Osteria Mozza, with a spiral meat lasagna as the main course\n* **Newark:** Fariyal Abdullahi of Hav & Mar, with chermoula-glazed chicken\n* **Chicago:** Jenner Tomaska of Esmé, with roast chicken stuffed with a mushroom mousseline\n* **Houston:** Justin Yu of Theodore Rex, with poached chicken in a lemongrass curry\n* **Denver:** Penelope Wong of Yuan Wonton, with char siu pork\n* **San Francisco:** David Barzelay of Lazy Bear, with grilled rack of lamb\n* **Washington, D.C.:** Isabel Coss and Matt Conroy of Lutèce, with a duck leg enchilada\n* **São Paulo:** Manu Buffara of Manu in Curitiba, with roast beef and collard greens\n* **London:** Tomos Parry of Mountain and Brat, with grilled halibut\n* **Tokyo:** Tashi Gyamtso of Jimgu, with ginger soy chicken and Japanese curry ratatouille\n\nEach menu also has its own starter and salad. London's roasted pumpkin with rosemary stracciatella and Los Angeles's Mozza caprese with burrata are two of the more distinctive ones.\n\nThe release names \"Tokyo\" but does not say whether that means Narita, Haneda or both, so check the pre-order screen for your flight.\n\n## More than the meal\n\nUnited is pairing the food with Chef's Table videos on its seatback screens, which show how the dishes were made. It is also adding episodes of the Chef's Table: Talks podcast. Aaron McMillan, United's managing director of hospitality programs, said the goal is to bring \"a greater sense of culinary discovery\" to the flight.\n\nThe menu is part of a wider push on food. United says it spent more than $150 million on dining in 2025. This year it has widened meal pre-order in United Economy, refreshed its snack boxes, upgraded its wine list and tested new food setups in its clubs.\n\n## Where to eat before you board\n\nThe Chef's Table meals are on the plane, but Polaris travelers at the hubs also get a meal on the ground. United runs Polaris lounges at [Chicago O'Hare](https://www.loungefrog.com/lounges/ord-united-polaris-lounge), [Newark](https://www.loungefrog.com/lounges/ewr-united-polaris-lounge), [San Francisco](https://www.loungefrog.com/lounges/sfo-united-polaris-lounge), [Los Angeles](https://www.loungefrog.com/lounges/lax-united-polaris-lounge), [Houston](https://www.loungefrog.com/lounges/iah-united-polaris-lounge) and [Washington Dulles](https://www.loungefrog.com/lounges/iad-united-polaris-lounge), each with a sit-down dining room. If you plan to eat a full meal in the lounge, you may want to pick something lighter on board, or the other way around.\n\nFor more on the airline, its hubs and its fleet, see our [United Airlines guide](https://www.loungefrog.com/airlines/ua).","textStyle":"body","layout":"text"}]}
